Definition
Soft 17 is any hand totaling 17 where an Ace counts as 11. The hand is "soft" because the Ace can drop to 1 without busting on the next card.
Examples
If you're holding a soft 17 and draw a 5, the Ace drops from 11 to 1, giving you a hard 12. You can never bust on the next card from a soft hand.

The dealer's behavior on soft 17 is one of the most impactful blackjack rules:
Always check the table placard or the printing on the felt before sitting down. The rule is usually displayed prominently. H17 tables are common in regional casinos; S17 is more common on the Las Vegas Strip.
